BREAKFAST FOR DINNER


JULY 6, 2012 - BREAKFAST FOR DINNER
With mom out the door before the sun is up, our family is no longer enjoying breakfast together.  Last night we sat down to pancakes and sausage, thanks to Daddy cooking for us.  Aside from being "fun" to eat breakfast for dinner, it's usually a rather economical choice as well. Most of the options below come in under the $10; some even less than $5. That's the bonus to making fresh food at home is being able to cut back the price while increasing the flavors!
1. Breakfast Pizza:  My family can eat pizza any time, night or day, but they love to change things up. It is great with those canned pizza crusts…just put some bacon, or crumbled sausage, cheese, and uncooked egg in a square edged pan, and pop in the oven—instant casserole!  You can add tomatoes, peppers or spinach for flair.
2. Make A Breakfast Burrito: We love food that's self-contained and this version can even forgo the dinner table if needs be. Breakfast burritos also carry the ability to use up leftovers in your refrigerator such as stray meats and veggies!  All you need are tortillas, cheese and egg…you have got it made!
3. Bacon Waffles with Maple Syrup: Waffles for dinner, well there's just nothing better. Add in bacon bits and you have a low cal version of those drive thru waffle concoctions.
4. Breakfast Casseroles: Casseroles are beautiful things. They can be prepared and left in the refrigerator for your return home, just waiting for you to toss them in the oven. They feed a hungry mob and still leave you time to help kids with homework or put your feet up and relax while they bake!
5. Fluffy Pancakes: Although the rich and heavy waffles might weigh you down, light and airy pancakes will leave you wondering why you don't make them more often!  Just find a recipe with baking powder in it!
6. Potato Pancakes: There isn't really a time of day that potato pancakes aren't appropriate, but you can feed a family of 4 for just a few dollars. You can serve them solo, or add to another of these meals.
7. Biscuits and Gravy: Biscuits are made in a snap and although they're great just as they stand, they're even more delicious when mixed with leftover meats, cheeses, an egg or even some velvety white gravy...a hungry hubby will thank you!.
8. Eggs ala Granny: While it is not good to indulge in fried eggs on a regular basis, a little splurge now and then won’t kill you.  Just throw the eggs in while the grease is still hot from the bacon, and crisp up those edges! My granny would be proud!
9. Monkey Bread: This particular sugar and cinnamon concoction is the Sunday fare that my family cries about if its all gone!  Make it at night, all together, and enjoy with a good cup of decaf.  The recipe is on the four-pack of bisquits at the big-box store.
10. Breakfast Muffins: Even though it's dinner, muffins are rich enough that they're perfect for the theme and curb any sweet tooth at the table. Consider them a breakfast dessert!
